Avli Modern Greek, a newly opened restaurant in Uluwatu, is looking for an experienced and detail-oriented Chef de Partie (Cold Kitchen). In this role, you will be fully responsible for the preparation and presentation of cold dishes, including salads, appetizers, dressings, and other cold starters. You will oversee the mise en place of your section, maintain consistency in quality, and ensure that every dish reflects the restaurant’s standards.
Key Responsibilities:
• Lead the preparation and presentation of cold dishes such as salads, dressings, cold starters, and canapés.
• Manage mise en place for the cold kitchen section, ensuring freshness and availability of all ingredients.
• Guarantee consistency in flavor, portion size, and presentation.
• Train, supervise, and support demi chefs or commis working in the cold kitchen section.
• Collaborate with the sous chef and head chef on menu development and seasonal cold items.
• Adhere strictly to food safety, hygiene, and sanitation standards.
• Ensure smooth coordination with other kitchen sections during service.
Requirements:
• 1–3 years of experience in a cold kitchen or garde manger section, preferably in a restaurant or hotel.
• Strong knowledge of cold preparations, including salads, dressings, and cold appetizers.
• Excellent presentation skills with an eye for detail.
• Solid understanding of food safety and hygiene practices.
• Ability to work well in a team environment and lead junior staff.
• Flexible, reliable, and able to work under pressure in a fast-paced kitchen.
