Key Responsibilities

  • Assist the Head Chef in managing the daily operations of the Sushi Kitchen.
  • Supervise and coordinate the Sushi Kitchen team during daily operations.
  • Maintain consistency in taste, presentation, portioning, and food quality.
  • Monitor the preparation and handling of fresh fish, seafood, rice, and other sushi ingredients.
  • Ensure proper food storage, labeling, FIFO, and stock rotation procedures are followed.
  • Monitor daily stock levels and communicate ordering requirements to the Head Chef.
  • Ensure all food preparation areas, equipment, and utensils are clean and properly maintained.
  • Ensure compliance with food safety, hygiene, sanitation, and HACCP standards.
  • Train, guide, and develop Sushi Kitchen team members on techniques, recipes, hygiene, and kitchen procedures.
  • Support menu development and contribute ideas for new sushi dishes and seasonal offerings.
  • Coordinate effectively with other kitchen sections and the service team to ensure smooth operations.
  • Assist the Head Chef in managing kitchen organization, discipline, and team performance.
  • Step in as the person in charge of the Sushi Kitchen in the absence of the Head Chef.
  • Ensure the Sushi Kitchen operates efficiently during busy periods and special events.
  • Perform other duties and responsibilities assigned by the Head Chef or management.

Qualifications

  • Minimum 3–5 years of experience in sushi or Japanese cuisine, preferably with experience in a supervisory position.
  • Strong knowledge of sushi preparation, sashimi, Japanese ingredients, and kitchen techniques.
  • Good understanding of food safety, hygiene, and sanitation standards.
  • Strong leadership and team management skills.
  • Ability to work under pressure in a fast-paced hospitality environment.
  • Good communication and interpersonal skills.
  • Strong attention to detail and commitment to food quality.
  • Creative, organized, disciplined, and highly motivated.
  • Able to work flexible hours, including weekends, public holidays, and peak operational periods.
  • Hospitality or culinary education is an advantage.
  • Good command of English is an advantage.
